Week 2: Summer Cooking Challenge

You guys. This recipe.

I’m on a summer cooking challenge i.e. my attempt to not heat up the (already scorching) house by using the oven. I’ve been experimenting with crockpot meals so far; I hope to see more grilling in my near future, too.

Whether you’re looking to have breakfast for breakfast or breakfast for dinner, this Slow Cooker Frittata with Broccoli, Ham, and Swiss recipe is TO DIE FOR. Also a great way to get your kids to eat their greens – it calls for lots of broccoli, which transforms into a delectable treat in the crock.

A few notes:

  • I used my Everything But the Bagel spice from Trader Joe’s instead of the Spike seasoning it calls for. Couldn’t find Spike seasoning to save my life. This substitution still gave the dish great flavor.
  • I added a splash of milk to the eggs to make them fluffier.

Between my husband and I, we downed half the dish in one sitting. The leftovers were breakfast the next day (yeah, ROI!) and warmed up great. I will say that the broccoli seemed almost too soft; next time, I probably won’t be microwaving them before they get tossed into the slow cooker.

Final thoughts: this is a delicious, quick-to-toss-together dish for breakfast, lunch or dinner. A great answer to the question: How do I get my kids to eat vegetables?!
